No-Bake Cake Batter Pie

The Domestic's Rebels No-Bake Cake Batter Pie has been at the top of my list of recipes to try for quite some time now. For a cake batter lover like myself, this seemed like the perfect recipe. The pie is described as "cool and creamy" and is supposed taste exactly like uncooked Funfetti cake batter. After reading that, I knew I had to try it out.

Personally, Funfetti boxed cake is my favorite type of cake. It always has been. I was super excited to see if this pie would really deliver on the taste like it claimed. I've seen "cake batter" flavored foods that have tasted nothing like the real thing before and was afraid that this would be the case here, but boy, was I wrong.


HOW TO MAKE NO-BAKE CAKE BATTER PIE

You Will Need:

  • One box (3.4 oz) instant vanilla pudding mix
  • 1 cup milk
  • 1 envelope unflavored gelatin
  • 2/3 cup Funfetti cake mix (just the dry mix, do not make the cake)
  • 1 cup heavy whipping cream
  • One (9" round) prepared graham cracker crust
  • 1/4 rainbow sprinkles (plus more for garnish)
Directions:

  1. First, prepare the gelatin mixture: in a small saucepan, sprinkle the gelatin powder over 3 Tablespoons of cold water. let stand for 5 minutes. Add the saucepan to medium-low heat and heat, stirring occasionally, until mixture has dissolved. Remove from heat and let cool 5 minutes.
  2. In a large bowl, whisk together the pudding mix and milk until smooth. Set aside. Meanwhile, prepare the whipped cream portion by adding the heavy whipping cream to a stand mixer fixed with the whisk attachment. Whip the heavy whipping cream on high speed for 5-7 minutes, gradually adding in the Funfetti cake mix powder and the liquid gelatin mixture as it whips until it achieves stiff peaks.
  3. Fold the Funfetti whipped cream mixture into the pudding mixture, taking care to ensure the bottom of the bowl is fully combined and incorporated. add in the rainbow sprinkles and stir well. Pour the cake batter mixture into the prepared graham cracker crust and smooth out the top.
  4. Refrigerate for at least 4 hours or until set. Just before serving, garnish with additional whipped cream and sprinkles if desired.

MY REVIEW

To put it simply, I thought this recipe was great. I've had a lot of cake batter flavored foods, but this one definitely takes the cake. This is pretty much the closest you can get to eating raw cake batter without eating the real thing. I also thought of all of my friends who have said to me in the past "I like the taste of cake, but I just don't like the texture" (I know, how can someone not like cake?). I thought that this would be the perfect compromise for people like my friends. This has the taste of cake, but skips the unique texture. I really wanted to like this recipe because I was already a fan of The Domestic Rebel before this, and she did not disappoint. Just like she promised it would be, the pie is cool and creamy. The cold pudding is smooth and sweet, just like real cake batter. The process was easy to follow and straightforward. I would give this recipe a 9/10. The only down side to this recipe was having to wait 4 hours for it to set. If you're looking for a quick treat, this would not be the one. But after tasting is no-bake cake batter pie, I would gladly wait.
